docs: describe keel's real guard, land and release entrypoints

The Runseal profiles :init, :guard, :land and :release went with the
generic wrapper suite, and .runseal/ holds no wrappers. Point Operating
and Common commands at guard.yml, plumb land, and plumb release
dispatch; generic init has no successor.
